Watermelon Mango Tajín Paletas
Ingredients
Mango Layer
- 2 cups ripe mango chunks
- 2 tbsp fresh lime juice
- 1 tbsp honey or agave, optional
- Pinch of kosher salt
- 2 to 4 tbsp water or coconut water, as needed
Watermelon Layer
- 3 cups seedless watermelon cubes
- 1 tbsp fresh lime juice
- 1 tbsp honey or agave, optional
- 1/2 tsp Tajín or chile-lime seasoning, plus more for serving
- Pinch of kosher salt
- Optional: 1 tbsp chamoy for a swirl effect
Instructions
- Blend the Mango Layer: Blend mango, lime juice, honey if using, salt, and just enoughwater to make a smooth puree.
- Blend the Watermelon Layer: Blend watermelon, lime juice, honey if using, Tajin, and salt until smooth. Strain if a smoother texture is desired.
- Layer the Molds: Spoon or pour mango puree into popsicle molds, filling each about one-third full. Add a small swirl ofchamoy if using.
- Add Watermelon: Pour the watermelon mixture over the mango layer. For a layered look, freeze the first layer for 30 to 45 minutes before adding the second layer. For a swirl, gently drag a skewer through the layers.
- Freeze: Insert sticks and freeze until solid, at least 6 hours.
- Serve: Unmoldand lightly dust with extra Tajin immediately before serving.
