Watermelon Mango Tajín Paletas

Ingredients

Mango Layer

  • 2 cups ripe mango chunks
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or agave, optional
  • Pinch of kosher salt
  • 2 to 4 tbsp water or coconut water, as needed

Watermelon Layer

  • 3 cups seedless watermelon cubes
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or agave, optional
  • 1/2 tsp Tajín or chile-lime seasoning, plus more for serving
  • Pinch of kosher salt
  • Optional: 1 tbsp chamoy for a swirl effect

Instructions

  1. Blend the Mango Layer: Blend mango, lime juice, honey if using, salt, and just enoughwater to make a smooth puree. 
  2. Blend the Watermelon Layer: Blend watermelon, lime juice, honey if using, Tajin, and salt until smooth. Strain if a smoother texture is desired.
  3. Layer the Molds: Spoon or pour mango puree into popsicle molds, filling each about one-third full. Add a small swirl ofchamoy if using. 
  4. Add Watermelon: Pour the watermelon mixture over the mango layer. For a layered look, freeze the first layer for 30 to 45 minutes before adding the second layer. For a swirl, gently drag a skewer through the layers.
  5. Freeze: Insert sticks and freeze until solid, at least 6 hours.
  6. Serve: Unmoldand lightly dust with extra Tajin immediately before serving.
