Frozen Malibu Mango Rum Sunset Slush
Ingredients
Slushie
- 2 cups fresh mango cheeks, best if frozen night before (approx. 2 mangos)
- ½ cup fresh ripe mango puree (for the base contrast)
- 4 oz Malibu coconut rum
- 2 oz fresh lime juice
- 2 tbsp agave nectar
- 1 cup crushed ice
Garnish
- 2 tbsp Chamoy sauce
- 1 tbsp Tajín seasoning
- fresh lime wheels
Instructions
- Prep the Glasses: Drizzle 1 tablespoon of Chamoy around the inside walls of two tall cocktail glasses, letting it run down to create a sunset streak effect. Rim the edge of the glasses with lime juice and dip them into a shallow dish filled with Tajín.
- Blend the Slush: In a high-powered blender, combine the frozen mango cheeks, Malibu coconut rum, fresh lime juice, agave nectar, and crushed ice. Blend on high until completely smooth and thick like a sorbet slush.
- Assemble the Contrast: Pour a small amount of fresh room-temperature mango puree into the bottom of each prepared glass.
- Pour and Serve: Slowly pour the frozen coconut-mango slush over the puree base to create a layered sunrise visual. Top with an extra dash of Tajín and garnish with a fresh lime wheel. Serve immediately with a straw.
