INGREDIENTS
For the salad:
2 cups shredded kale
1 cup shredded cabbage
½ cup shredded carrots
1 cup julienned red bell pepper
½ cup cucumber, sliced
1 tsp sesame seeds
½ cup cilantro, chopped
¼ cup roasted salted peanuts
½ cup wonton strips
2 mangos peeled and cut into slices or chunks
For the Spicy Peanut Dressing:
½ cup creamy peanut butter
2 tsp rice wine vinegar
2 large cloves garlic
½ inch piece ginger, peeled
2 tbsp soy sauce
1.5 tbsp sriracha
¼ water or more as needed- Combine all of the salad ingredients in a large bowl or arrange on a serving platter.
- Combine the dressing ingredients in a food processor until smooth.
- Serve immediately with spicy peanut dressing on the side.
