Thai Mango Crunch Salad with Spicy Peanut Dressing

Ingredients

For the salad

  • 2 cups shredded kale
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1 cup julienned red bell pepper
  • 1/2 cup cucumber, sliced
  • 1 tsp sesame seeds
  • 1/2 cup cilantro, chopped
  • 1/4 cup roasted salted peanuts
  • 1/2 cup wonton strips
  • 2 mangos peeled and cut into slices or chunks

For the Spicy Peanut Dressing

  • 1/2 cup creamy peanut butter
  • 2 tsp rice wine vinegar
  • 2 large cloves garlic
  • 1/2 inch piece ginger, peeled
  • 2 tbsp soy sauce
  • 1.5 tbsp sriracha
  • 1/4 water or more as needed

Instructions

  1. Combine all of the salad ingredients in a large bowl or arrange on a serving platter.

  2. Combine the dressing ingredients in a food processor until smooth.

  3. Serve immediately with spicy peanut dressing on the side.
