Thai Mango Crunch Salad with Spicy Peanut Dressing
Ingredients
For the salad
- 2 cups shredded kale
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1 cup julienned red bell pepper
- 1/2 cup cucumber, sliced
- 1 tsp sesame seeds
- 1/2 cup cilantro, chopped
- 1/4 cup roasted salted peanuts
- 1/2 cup wonton strips
- 2 mangos peeled and cut into slices or chunks
For the Spicy Peanut Dressing
- 1/2 cup creamy peanut butter
- 2 tsp rice wine vinegar
- 2 large cloves garlic
- 1/2 inch piece ginger, peeled
- 2 tbsp soy sauce
- 1.5 tbsp sriracha
- 1/4 water or more as needed

Instructions
Combine all of the salad ingredients in a large bowl or arrange on a serving platter.
Combine the dressing ingredients in a food processor until smooth.
Serve immediately with spicy peanut dressing on the side.
