Mango Smoke Salmon Cucumber Bites

Ingredients

2 large fresh mangos, diced

2 large cucumbers, sliced into thick rounds

4 oz smoked salmon, chopped

2 – 3 tbsp Kewpie mayo

1 – 2 tbsp fresh lime juice

1 – 2 small Thai chilis, finely chopped and seeds removed

2 tbsp extra virgin olive oil

Pinch of sea salt

Chives (optional for garnish)

Sesame seeds (optional for garnish)

Instructions

  1. Dice mango into small cubes, chop smoked salmon and slice cucumbers into thick, even rounds.
  2. In a bowl, combine diced mango, smoked salmon, Kewpie mayo, lime juice, Thai chilis, EVOO and a pinch of salt. Gently mix until fully coated but still chunky.
  3. Lay cucumber rounds flat and spoon the mango-salmon mixture on top of each piece.
  4. Sprinkle with sesame seeds and fresh herbs. Serve immediately.
