Mango Cream Cookies

Ingredients

  • 12 oz Salted butter
  • 1 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 tbsp Vanilla
  • 2 each Eggs
  • 3 cups Flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 cups Mango pieces ¼”
  • 1 cup White chocolate chips
  • 1 tsp Ground ginger

Instructions

  1. Place the butter and sugars into mixer and mix on medium speed for 8 minutes. 

  2. Add in the vanilla and eggs and mix in for 1 minute

  3. While mixer is on low add in the flour, baking soda, and salt and let fold together. Flour should be fully combined 

  4. Remove from the mixer and using a spatula, fold in the mango, chocolate chips, and ginger 

  5. Using a scoop, portion the cookies and place on parchment lined cookie sheet. 

  6. Place into the oven for 8-10 minutes until the cookies are golden brown

  7. Let cool and serve
