Tropical Mango & Strawberry Shortcake

Ingredients

2 ripe mangos, peeled and diced

1 lb fresh strawberries, hulled and sliced

2 tbsp granulated sugar

1 tbsp fresh lime juice

6 pre-baked shortcake biscuits (store-bought or homemade)

1 cup heavy whipping cream

1 tsp vanilla extract

Instructions

  1. Macerate the Fruit: In a medium bowl, combine the diced mango, sliced strawberries, sugar, and lime juice. Stir well and let sit at room temperature for at least 20 minutes so the fruits release their natural juices. 
  2. Whip the Cream: In a large bowl, beat the heavy cream and vanilla extract until soft peaks form. 
  3. Assemble: Slice the shortcake biscuits in half horizontally. 
  4. Layer: Spoon a generous amount of the juicy mango-strawberry mixture over the bottom half of each biscuit. Top with a large dollop of whipped cream. 
  5. Serve: Place the top half of the biscuit over the cream and serve immediately.
