Mango Cobb Salad
Ingredients
- 2 Ripe Mangos
- 3 cup Lettuce, roughly chopped
- 1 Avocado, cut into strips
- 1/2 cup Feta, crumbled
- 1/2 cup Cherry Tomatoes, halved
- 4 slice Cooked Bacon, crumbled
- 1/4 cup Pickled Red Onions
- 2 Soft Boiled Eggs
Salad Dressing
- 1 tbsp Honey Mustard
- 1 tbsp Red Wine Vinegar
- 1 tsp Honey
- 2 tbsp Orange Juice
- 1 Garlic Clove, minced
- 2 tbsp Olive Oil
- Sea Salt (to taste)
- Fresh Cracked Pepper (to taste)

Instructions
Add lettuce to a large bowl and top with mango, avocado, feta, tomato, bacon and pickled red onion. Set aside.
Whisk together remaining ingredients and pour over salad.
Season with salt and pepper to taste.
