Bottled-Style Mango Habanero Hot Sauce

Ingredients

2 ripe mangos, peeled and chopped

2-3 fresh orange habanero peppers (stemmed and seeded for less heat, or leave seeds for maximum heat)

½ cup white vinegar

¼ cup water

2 cloves garlic, smashed

¼ cup chopped white onion

1 tbsp honey

1 tsp kosher salt

Instructions

  1. Simmer Aromatics: In a medium saucepan, combine the chopped mango, habaneros, garlic, white onion, vinegar, and water. Bring to a gentle boil over medium-high heat. 
  2. Cook Down: Reduce heat and let simmer for 10-15 minutes until the mango and onions are completely soft. 
  3. Blend: Transfer the entire mixture to a blender. Add the honey and kosher salt. Blend on high speed for 2 full minutes until the sauce is incredibly smooth and emulsified. 
  4. Strain (Optional): For a commercial-style texture, press the sauce through a fine-mesh strainer to remove any remaining pulp. 
  5. Bottle and Store: Pour the hot sauce into a sterilized glass bottle or jar. Let cool to room temperature, then seal and refrigerate. The flavor deepens after 24 hours.
