Mango Shrimp Ceviche

    1/4 cup fresh mango, diced    
    1 pound medium shrimp, peeled
    1 tomato, diced
    2 lemons, juiced
    1 lime
    1 clove garlic, minced
    1/4 cup extra virgin olive oil
    1/4 cup green onions, chopped
    1/4 cup cilantro, chopped
    1 teaspoon honey
    Salt/pepper to taste


    In a large bowl, add 1 lb of washed, drained, halved and peeled shrimp. Pat them dry with paper towel if possible. Add 1 cored, diced tomato, juice from 2 lemons, juice from 1 lime, 1 minced garlic clove and pinch of salt. Mix well. Cover and let sit in fridge for at least 45 mins. Drain shrimp from mixture and toss in a clean bowl. Now add 1/4 cup extra virgin olive oil, 1 tsp lime zest, 1/4 cup chopped cilantro, 1/4 cup chopped green onions, 1 tsp honey,1/4 cup diced mango, salt, and pepper. Mix and serve with white rice and mixed green salad! Enjoy!
