Mango Roasted Ribs with Mango BBQ Sauce
Ingredients
- 2 racks Baby Back ribs
- 2 Cups Mustard
- 1 cup BBQ rub seasoning
- 4 cups Mango pieces
- 16 fl oz. Water
BBQ Sauce
- 12 fl oz. BBQ sauce
- 4 fl oz. Renderings
- 2 cups Mango, diced
- 1 cup Brown sugar
- 6 fl oz. Bourbon (optional)
- 2 oz. Butter

Instructions
FOR THE RIBS
- Preheat the oven to 400 degrees
- Remove the membrane off the back of the ribs, Rub the ribs with the mustard to completely coat
- Season both sides of the ribs with the BBQ seasoning
- In a large container blend the mango pieces in the water and place into the cooking pan
- Place wire rack in the cooking pan place ribs on the wire rack cover with foil and place in the oven and cook for one hour
- After one hour remove the ribs from the oven flip over and cook for an additional 45 minutes
- Once fully cooked remove from oven and remove the foil
- While ribs are resting in a large mixing bowl place the sauce ingredients in a mixing bowl and blend until smooth baste the ribs of the BBQ sauce and serve
