    Ingredients

    Brine
    1 gal cidar vin
    1 whole raw ham (cut into sections)
    2 c sugar
    2 c salt
    1 c brown sugar
    1/4 c allspice
    1 T red pepper
    12 mangos pureed Slaw
    Slaw
    4 heads of shreeded cabbage
    2 julienne red peppers
    2 julienne red onions
    6 julienne mangos
    2 c cider vinegar
    1 T sugar
    2 T water
    Mango BBQ
    12 pureed mango
    1 c vinagar
    4 arbol chilis
    1 c sugar
    pinch salt
    Tostones
    12 plantains slices, fried, flatten, fried

    Instructions

    Soak pork in brine for 24 hours then rinse.
    Bake at 300 degrees for 12 hours
    Shred Pork
    Smear Mango BBQ on plate.
    Place tostone on top of smear.
    Place pork on top of tostone.
    Place Slaw on top of pork
