INGREDIENTS

Brine

  • 1 gal cidar vin
  • 1 whole raw ham (cut into sections)
  • 2 c sugar
  • 2 c salt
  • 1 c brown sugar
  • 1/4 c allspice
  • 1 T red pepper
  • 12 mangos pureed Slaw
  • Slaw

  • 4 heads of shreeded cabbage
  • 2 julienne red peppers
  • 2 julienne red onions
  • 6 julienne mangos
  • 2 c cider vinegar
  • 1 T sugar
  • 2 T water
  • Mango BBQ

  • 12 pureed mango
  • 1 c vinagar
  • 4 arbol chilis
  • 1 c sugar
  • pinch salt
  • Tostones
  • 12 plantains slices, fried, flatten, fried
    1. Soak pork in brine for 24 hours then rinse.
    2. Bake at 300 degrees for 12 hours
    3. Shred Pork
    4. Smear Mango BBQ on plate.
    5. Place tostone on top of smear.
    6. Place pork on top of tostone.
    7. Place Slaw on top of pork
