Mango All Spice Brined Pasture Prime Pork, Mango Arbol BBQ, Pickled Mango, Tostone
Ingredients
Brine
- 1 gallon cidar vin
- 1 whole raw ham (cut into sections)
- 2 cups sugar
- 2 cups salt
- 1 cup brown sugar
- 1/4 cup allspice
- 1 tbsp red pepper
Slaw
- 4 heads of shredded cabbage
- 2 julienne red peppers
- 2 julienne red onions
- 6 julienne mangos
- 2 cups cider vinegar
- 1 tbsp sugar
- 2 tbsp water
Mango BBQ
- 12 pureed mango
- 1 cup vinegar
- 4 arbol chilis
- 1 cup sugar
- pinch salt
- Tostones
- 12 plantains sliced, fried, flatten, fried

Instructions
Soak pork in brine for 24 hours then rinse.
Bake at 300 degrees for 12 hours
Shred Pork
Smear Mango BBQ on plate.
Place tostone on top of smear.
Place pork on top of tostone.
Place Slaw on top of pork
