Viral Mango Cowboy Caviar Dip
Ingredients
Caviar
- 2 ripe, firm mangos peeled and medium-diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) black-eyed peas, rinsed and drained
- 1 ½ cups fire-roasted sweet corn (fresh or frozen thawed)
- 1 medium red bell pepper, finely diced
- 1 cup cherry tomatoes, quartered
- ½ cup red onion, finely chopped
- 1 large jalapeño, seeded and minced
- ½ cup fresh cilantro, finely chopped
Dressing
- ¼ cup cold-pressed olive oil
- 3 tbsp fresh lime juice
- 1 tbsp honey
- 1 tsp ground cumin
- 1 tsp chili powder
- salt and black pepper to taste
Instructions
- Prep the Base: In a large mixing bowl, combine the rinsed black beans, black-eyed peas, fire-roasted corn, red bell pepper, cherry tomatoes, red onion, and minced jalapeño.
- Add the Mango: Gently fold in the medium-diced fresh mango and chopped cilantro, taking care not to smash the mango cubes.
- Whisk the Dressing: In a separate small bowl or glass measuring cup, vigorously whisk together the olive oil, fresh lime juice, honey, ground cumin, chili powder, salt, and pepper until emulsified.
- Toss and Chill: Pour the dressing over the caviar mixture. Toss gently with a large spoon until everything is evenly coated. Cover and refrigerate for at least 1 hour before serving to let the flavors marry. Serve alongside tortilla chips.
