Ingredients

Caviar

  • 2 ripe, firm mangos peeled and medium-diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) black-eyed peas, rinsed and drained
  • 1 ½ cups fire-roasted sweet corn (fresh or frozen thawed)
  • 1 medium red bell pepper, finely diced
  • 1 cup cherry tomatoes, quartered
  • ½ cup red onion, finely chopped
  • 1 large jalapeño, seeded and minced
  • ½ cup fresh cilantro, finely chopped

Dressing

  • ¼ cup cold-pressed olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • salt and black pepper to taste

Instructions

  1. Prep the Base: In a large mixing bowl, combine the rinsed black beans, black-eyed peas, fire-roasted corn, red bell pepper, cherry tomatoes, red onion, and minced jalapeño. 
  1. Add the Mango: Gently fold in the medium-diced fresh mango and chopped cilantro, taking care not to smash the mango cubes. 
  1. Whisk the Dressing: In a separate small bowl or glass measuring cup, vigorously whisk together the olive oil, fresh lime juice, honey, ground cumin, chili powder, salt, and pepper until emulsified. 
  1. Toss and Chill: Pour the dressing over the caviar mixture. Toss gently with a large spoon until everything is evenly coated. Cover and refrigerate for at least 1 hour before serving to let the flavors marry. Serve alongside tortilla chips.
