Overripe Spiced Tropical Mango Bread
Ingredients
2 cups very ripe fresh mango, finely mashed or pureed (approx. 3 mangos)
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground ginger
½ cup unsalted butter, melted and cooled
¾ cup granulated sugar
½ cup packed light brown sugar
2 large eggs, room temperature
1 tsp pure vanilla extract
Instructions
- Prep Equipment: Preheat oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan and line the bottom with parchment paper for easy removal.
- Combine Dry Sift: In a large bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, and ground ginger until uniform.
- Process Wet Base: In a separate medium bowl, whisk the melted butter, white sugar, and brown sugar together until no lumps remain. Beat in the eggs one at a time, followed by the vanilla extract and the mashed ripe mango puree.
- Fold to Batters: Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold the mixture together gently until just combined. Stop folding as soon as the flour pockets disappear to prevent a dense bake.
- Bake and Set: Pour the thick batter into your prepared loaf pan. Bake for 55-65 minutes, checking center doneness with a toothpick (it should come out clean or with a few moist crumbs). Cool in the pan for 10 minutes, then invert onto a wire cooling rack to cool completely before slicing.
