Mango Walnut Shrimp with Mango Basmati Rice
Ingredients
Mango Walnut Shrimp
- 2 lbs shrimp (cleaned with tails removed)
- 1/2 cup cornstarch
- 1 tsp salt
- 1 egg
- 2 fl oz fresh mango, blended
- 1 cup fresh mango, sliced Julienne
- 2 tbsp green onions, chopped
- 1/4 cup toasted walnuts
- 2 cups Mango Sweet Sauce (see below)
Candied Walnuts
- 1/4 cup honey
- 2 fl oz fresh mango, blended
- 1 cup walnut halves
- 1/4 cup fresh mango, diced
Mango Sweet Sauce
- 1/2 cup mayonnaise
- 1/4 cup honey
- 2 tbsp yogurt, plain
- 2 fl oz fresh mango, blended
Mango Basmati Rice
- 1 cup Basmati rice
- 1/2 cup water
- 1 cup fresh mango, blended
- 2 tsp salt
- 1/4 cup fresh mango, diced ¼”

Instructions
Mango Walnut Shrimp
- In a shallow dish, combine the cornstarch, salt, and black pepper. In another shallow dish, whisk together the egg and water. Dip each shrimp in the cornstarch mixture, then in the egg mixture, and then back in the cornstarch mixture.
- In a large skillet or wok, heat about 1 inch of vegetable oil over medium-high heat until hot.
- Working in batches, add the shrimp to the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Place the shrimp on a wire rack while cooking the remaining shrimp.
- Once all the shrimp is cooked, place over the Mango Basmati Rice. Drizzle with the Mango Sweet Sauce, sprinkle with Candied Walnuts and top with mango slices. Garnish with green onions and serve.
Candied Walnuts
- In a small saucepan, combine the honey and water over medium heat. Cook, stirring occasionally, until the mixture thickens. Add the walnut halves and stir to coat.
- Spread the coated walnuts on a baking sheet lined with parchment paper and let cool.
Mango Sweet Sauce
- In a medium bowl, whisk together the mayonnaise, honey, yogurt, and mango until smooth. Set aside.
Mango Basmati Rice
- In a small pan on high heat place the rice, water, salt, mango blended and mango pieces in pan and bring to a boil.
- Cover with lid and turn to low, cooking throughout.
- Once cooked, fluff and place into serving dish.
