INGREDIENTS

  • 2 Tbsp. hummus
  • 2 large whole grain tortillas
  • 1 medium tomato, diced
  • 1 small avocado, peeled, pitted and diced
  • 1 large mango, peeled and diced
  • Sea salt and pepper, to taste
  • 1/4 tsp. chili powder
  • 1 Tbsp. cilantro
  • 2 small scallions, thinly sliced
  • Spread the hummus on the tortillas, add the tomato, avocado, mango, salt, pepper, chili powder, cilantro and scallions. Wrap like a soft taco and serve immediately.
