Mango Pork Sliders with Mango BBQ Sauce
Ingredients
Mango Pork Sliders
- 12 Slider Buns or Rolls
- 12 slices Pickled Mango (optional)
- 1 lb Mango Pulled Pork
- 6 fl oz Mango BBQ Sauce
- 2 cup Mango Coleslaw (optional)
- 4 tbsp Garlic Butter
- 2 fl oz EVOO
- 1/4 cup Minced Onion
- 5 lb Boneless Pork Shoulder, large chunks
- 2 tbsp Salt / Pepper / Garlic Seasoning
- 2 tbsp Garlic Minced
- 1 tbsp Cumin
- 2 tsp Chili Powder
- 1 cup Diced Mango 1/2"
- 1 cup Mango Puree
- 12 fl oz Stock
- 16 fl oz BBQ Sauce
- 1 cup Brown Sugar
- 2 tbsp Garlic Minced
- 2 tsp Salt
- 2 tbsp Black Pepper
- 1 cup Dice Mango Pieces 1/2"
- 6 fl oz Mango Puree

Instructions
Mango Pulled Pork Sliders
Place the bottom buns on a small tray, top with optional pickled mango then the pulled pork.
Top the pork with the BBQ sauce and then the optional slaw. Place the top of the bun on the slaw and brush the top bun with garlic butter and place into oven at 350 degrees for 5 minutes.
Remove from oven and serve.
Mango Pulled Pork
In a Pressure cooker or slow cooker turn to sauté and place oil in the pot to heat, add the onions and sear.
Cut the pork into larger chunks and season with Salt pepper garlic mix and place into pot to sear. Sear all sides to lock in the moisture of the meat.
Once all sides are seared add in remaining ingredients and mix together. Turn the pot to pressure cook and set timer to 1 hour and high pressure. If using a slow cooker set on high for 6 hours.
Once cooked let set to natural release for 20 minutes, remove lid and place meat into bowl to shred.
Once shredded add a cup of the renderings back to meat to keep moist. Set aside to serve.
Mango BBQ Sauce
Place all ingredients into mixing bowl and using a stick blender blend all ingredients together. Place into a container to serve with the sliders.
