Mango Pork Meatballs with Sticky Mango Sauce
Ingredients
Mango Pork Meatballs
- 1 lb ground pork
- 3 fl oz fresh mango, blended
- 2 fl oz soy sauce
- 1 tsp salt
- 2 tsp sugar
- 1 tbsp ginger, grated
- 3 tbsp green onions, minced
- 1 tbsp cornstarch
- 1/2 cup water chestnuts, chopped
- 1 cup Panko breadcrumbs
- 2 tbsp sesame oil
- 1 tbsp olive oil
- Green onions (garnish)
Sticky Mango Sauce
- 1 cup fresh mango, blended
- 1/2 cup honey
- 2 fl oz Sweet Chili Sauce
- 2 tbsp green onions, chopped
- 1/4 cup fresh mango, diced
Instructions
Mango Pork Meatballs
- Add ground pork into a large bowl and mix in the blended mango. Mix well with a spatula until liquid is fully incorporated.
- Add soy sauce, salt, sugar, grated ginger, onions, and cornstarch.
- Add water chestnuts and eggs. Fold together, then add Panko breadcrumbs. Mix well and fold in the sesame oil.
- Scoop the mixture and roll into balls. Heat oil in a medium skillet and place the meatballs into skillet to brown.
- Sear on all sides quickly and place on a cookie sheet. Preheat oven to 350 degrees.
- Once all meatballs are seared, place in the hot oven for 10 minutes until cooked throughout.
- Once fully cooked, remove and toss in bowl with Sticky Mango Sauce to coat. Top with the green onions and serve.
Sticky Mango Sauce
- In a mixing bowl, mix together the mango, honey, sweet chili, onions, and diced mango.
- Mix until fully incorporated.
