Ingredients

Mango Pork Meatballs

  • 1 lb ground pork
  • 3 fl oz fresh mango, blended
  • 2 fl oz soy sauce
  • 1 tsp salt
  • 2 tsp sugar
  • 1 tbsp ginger, grated
  • 3 tbsp green onions, minced
  • 1 tbsp cornstarch
  • 1/2 cup water chestnuts, chopped
  • 1 cup Panko breadcrumbs
  • 2 tbsp sesame oil
  • 1 tbsp olive oil
  • Green onions (garnish)

Sticky Mango Sauce

  • 1 cup fresh mango, blended
  • 1/2 cup honey
  • 2 fl oz Sweet Chili Sauce
  • 2 tbsp green onions, chopped
  • 1/4 cup fresh mango, diced

Instructions

Mango Pork Meatballs

  1. Add ground pork into a large bowl and mix in the blended mango. Mix well with a spatula until liquid is fully incorporated.
  2. Add soy sauce, salt, sugar, grated ginger, onions, and cornstarch.
  3. Add water chestnuts and eggs. Fold together, then add Panko breadcrumbs. Mix well and fold in the sesame oil.
  4. Scoop the mixture and roll into balls. Heat oil in a medium skillet and place the meatballs into skillet to brown.
  5. Sear on all sides quickly and place on a cookie sheet. Preheat oven to 350 degrees.
  6. Once all meatballs are seared, place in the hot oven for 10 minutes until cooked throughout.
  7. Once fully cooked, remove and toss in bowl with Sticky Mango Sauce to coat. Top with the green onions and serve.

 

Sticky Mango Sauce

  1. In a mixing bowl, mix together the mango, honey, sweet chili, onions, and diced mango.
  2. Mix until fully incorporated.
