Ingredients

  • 6 fl oz Cooking Oil
  • 4 tbsp Salt Pepper Garlic Seasoning
  • 30 each Garlic Clove
  • 1 cup Water
  • 2.5 cups Prepped Mango Adobo Sauce
  • 5 lbs Pork Shoulder -cut into large pieces
  • 2 each Yellow Onions - 1” pieces
  • 2 cups Mango - ½” diced
  • 1 cup Fresh Mango Puree
  • Cooked Rice (optional)
  • Tortillas (optional)

MANGO ADOBO SAUCE - PREPPED

  • 1 cup Mango Diced
  • 1 cup Fresh mango Puree
  • 7 oz Chipotle & Adobo sauce

Instructions

  1. Pre-heat oven to 400 degrees
  2. Heat an oven safe pan with the cooking oil
  3. Season pork with salt, pepper and garlic seasoning as you are placing in the pan
  4. Sear one side of the meat until it is brown in color
  5. Flip meat to sear other side, sear until both sides are brown in color
  6. Remove meat from pan, set aside
  7. Add onions to pan, sauté for 2 minutes
  8. Add garlic to pan, sauté with onions for 1 minute
  9. Add fresh diced mango, water and mango puree to pan, cook for 3 minutes
  10. In a blender combine fresh mango, adobo sauce and mango puree. Blend until all ingredients are combined and smooth in texture
  11. Add prepped mango adobo sauce to the pan, stir to combine all ingredients together
  12. Put pork back in pan, flip pork pieces so that they are completely covered in sauce
  13. Cover and place pan in oven. Cook for 2 hours
  14. Remove Pork Adobo from oven. Lightly shred pork in pan with sauce.
  15. Serve Pork Adobo over your choice of rice and tortilla.
