Ingredients

2 ripe mangos (1 pureed, 1 finely diced)

3 Zespri Green Kiwis, peeled and finely diced

½ cup mini tapioca pearls (sago)

1 can (13.5 oz) full-fat coconut milk

½ cup sweetened condensed milk

1 cup nata de coco (coconut gel), drained (optional)

Instructions

  1. Cook the Sago: Bring a pot of water to a boil. Add the tapioca pearls and cook for 15 minutes, stirring occasionally. Turn off heat, cover, and let sit for 15 minutes until pearls are completely translucent. Rinse under cold water and drain well.
  2. Make the Base: In a large mixing bowl, whisk together the coconut milk, sweetened condensed milk, and the puree of one mango until smooth and creamy.
  3. Assemble: Gently fold the cooked sago, diced mango, diced kiwi, and nata de coco into the creamy mango-coconut base.
  4. Chill & Serve: Refrigerate for at least 2 hours to allow the dessert to thicken. Serve chilled in clear cups to show off the green and gold fruit chunks.
