3-Ingredient Mango Posset
Ingredients
- 2 large, ripe mangos
- 2 cups heavy cream
- ½ cup granulated sugar
- 2 tbsp fresh lime juice
Instructions
- Hollow the Mangos: Cut mangos in half lengthwise, removing the pit. Scoop out the flesh, leaving the skin intact to act as a “bowl.” Place the hollowed skins in a muffin tin to keep them steady.
- Make the Puree: Blend the scooped mango flesh and lime juice until completely smooth.
- Heat the Cream: In a medium saucepan, combine heavy cream and sugar. Bring to a gentle boil over medium heat, stirring constantly. Boil for exactly 3 minutes, then remove from heat.
- Combine: Whisk the fresh mango puree into the hot cream mixture until smooth and beautifully yellow.
- Pour and Chill: Pour the mixture evenly into the hollowed mango skins. Refrigerate for at least 3 hours until perfectly set and creamy.
