Mango Jello Slices

Ingredients

2 large ripe mangoes, peeled and diced (about 2 cups)

1 cup of water

2 packets (0.25 oz each) unflavored gelatin

2–3 tbsp honey or sugar

1 tbsp fresh lime juice

Pinch of salt

Tajín or chili-lime seasoning (optional, for garnish)

Instructions

  1. Slice each mango lengthwise and carefully remove the flesh, keeping the mango peel halves intact to use as molds. Dice the mango flesh.
  2. Blend the diced mango, mango juice, lime juice, sweetener (if using), and salt until completely smooth.
  3. Pour ½ cup of the mango mixture into a small saucepan. Sprinkle the gelatin over the liquid and let it bloom for 5 minutes.
  4. Heat over low heat, stirring constantly until the gelatin is completely dissolved. Do not let the mixture boil.
  5. Stir the warm gelatin mixture back into the remaining mango puree and whisk until fully combined.
  6. Arrange the reserved mango peel halves in a muffin tin or small bowls to help keep them upright. Carefully pour the mango gelatin mixture back into each mango peel until filled.
  7. Refrigerate for 3–4 hours, or until the mango jelly is completely set.
  8. Once firm, use a sharp knife to slice each filled mango half into wedges or slices, creating a fun mango “jello slice” look.
  9. Garnish with Tajín, chamoy, fresh lime juice, or mint if desired, and serve chilled.
