“Green & Gold” Layered Mango Kiwi Smoothie
Ingredients
Gold Layer (Mango
- 1 ½ cups frozen mango chunks
- ½ cup coconut water
- 1 tbsp fresh lime juice
Green Layer (Kiwi):
- 2 Zespri Green Kiwis, peeled
- ½ frozen banana
- 1 small handful of baby spinach (strictly for vibrant green color, won't affect taste)
- ½ cup coconut water
Instructions
- Blend the Gold Layer: In a blender, combine the frozen mango, coconut water, and lime juice. Blend until thick and smooth. Pour this mixture equally into the bottom of two tall, clear glasses.
- Rinse the Blender: Quickly rinse the blender pitcher to avoid color mixing.
- Blend the Green Layer: Add the kiwis, frozen banana, spinach, and coconut water to the blender. Blend until completely smooth and bright green.
- Layer: Carefully and slowly pour the green kiwi mixture over the back of a spoon into the glasses to sit cleanly on top of the mango layer.
- Garnish: Slice a kiwi wheel and slide it onto the rim of the glass. Serve immediately.
