“Green & Gold” Layered Mango Kiwi Smoothie

Ingredients

Gold Layer (Mango

  • 1 ½ cups frozen mango chunks
  • ½ cup coconut water
  • 1 tbsp fresh lime juice

Green Layer (Kiwi):

  • 2 Zespri Green Kiwis, peeled
  • ½ frozen banana
  • 1 small handful of baby spinach (strictly for vibrant green color, won't affect taste)
  • ½ cup coconut water

Instructions

  1. Blend the Gold Layer: In a blender, combine the frozen mango, coconut water, and lime juice. Blend until thick and smooth. Pour this mixture equally into the bottom of two tall, clear glasses.
  2. Rinse the Blender: Quickly rinse the blender pitcher to avoid color mixing.
  3. Blend the Green Layer: Add the kiwis, frozen banana, spinach, and coconut water to the blender. Blend until completely smooth and bright green.
  4. Layer: Carefully and slowly pour the green kiwi mixture over the back of a spoon into the glasses to sit cleanly on top of the mango layer.
  5. Garnish: Slice a kiwi wheel and slide it onto the rim of the glass. Serve immediately.
