INGREDIENTS

  • 1 ripe mango, peeled, pitted and diced
  • 2 tablespoons smoked almonds, coarsely chopped
  • 2 tablespoons dried cranberries
  • 4 tablespoons feta cheese
  • 4 tablespoons low fat balsamic dressing
  • 2 large handfuls baby spinach leaves, chopped
  • Mix first five ingredients together and toss. Serve over fresh spinach leaves.

    This salad pairs well with fresh grilled fish or chicken breast.
