Easy Mango Pie
Ingredients
- 4 ripe mangos, sliced
- ½ cup sugar
- 3 tbsp cornstarch
- Juice of ½ lemon
- 2 tsp cinnamon
- 1 pre-prepared pie crust, for base
- 1 pre-prepared pie crust, for lattice top
- 1 egg
- 1 tbsp milk

Instructions
- Prepare the Mango Filling:
- Slice four ripe mangos and place them in a mixing bowl.
- Add ½ cup of sugar, 3 tablespoons of cornstarch and the juice of half a lemon.
- Mix everything well until the mangos are evenly coated.
- Assemble the Pie:
- Pour the mango mixture into a pre-prepared pie crust.
- Sprinkle 2 teaspoons of cinnamon over the filling.
- Slice the second pie crust into strips and weave them into a lattice over the top of the pie.
- Finish and Bake:
- In a small bowl, combine one egg with a tablespoon of milk and brush this mixture over the crust.
- Bake the pie at 400°F for 30-45 minutes or until the crust is golden.
- Serve and Enjoy:
