Ingredients

  • 4 ripe mangos, sliced
  • ½ cup sugar
  • 3 tbsp cornstarch
  • Juice of ½ lemon
  • 2 tsp cinnamon
  • 1 pre-prepared pie crust, for base
  • 1 pre-prepared pie crust, for lattice top
  • 1 egg
  • 1 tbsp milk

Instructions

  1. Prepare the Mango Filling:
    • Slice four ripe mangos and place them in a mixing bowl.
    • Add ½ cup of sugar, 3 tablespoons of cornstarch and the juice of half a lemon.
    • Mix everything well until the mangos are evenly coated.
  2. Assemble the Pie:
    • Pour the mango mixture into a pre-prepared pie crust.
    • Sprinkle 2 teaspoons of cinnamon over the filling.
    • Slice the second pie crust into strips and weave them into a lattice over the top of the pie.
  3. Finish and Bake:
    • In a small bowl, combine one egg with a tablespoon of milk and brush this mixture over the crust.
    • Bake the pie at 400°F for 30-45 minutes or until the crust is golden.
  4. Serve and Enjoy:
    • Let the pie cool slightly before serving. Enjoy your delicious mango pie!
