Black Sesame Mochi with Mango

Ingredients

  • 1 mango
  • 1 can of coconut milk
  • 4 tbsp sesame seeds (ground up)
  • 16 oz Mochiko Flour
  • 1 tbsp salt
  • 3/4 cup sugar
  • 2 1/2 cups of water

Instructions

  1. Cut up and dice one ripe mango

  2. Add one can of coconut milk, salt, and ripe mango to a pot

  3. Turn on medium heat cover and stir every few minutes, once mango is soft (5-7 mins) blend ingredients together using a blender. Once boiling, lower temp and bring to a simmer for 5-10mins. Once jam texture is at desired thickness, take it off the heat and let cool

  4. Grind black sesame seeds using a mortar and pestle or food processor until coarse. Set aside

  5. Combine 16 oz of mochiko flour and ¾ cup of sugar in a separate large bowl. Slowly mix in 2½ cups of water. Once combined, cover and microwave this mixture on high for 8-10minutes. Using a spatula, mix the microwaved mochi mixture for a smooth and even consistency

  6. Roll out 1.5 ozs of mochi dough into flat discs

  7. Spoon mango jam into mochi discs

  8. Wrap mochi discs around the mango jam and seal any openings

  9. Roll the mochi in the ground black sesame seeds to coat

  10. Garnish with left over jam if desired, and enjoy!
