Cucumber Mango Salad
Ingredients
- 1 cucumber, spiraled or julienned
- 1/3 cup freshly chopped mango
- 2 tbsp dried fruit (raisin, berries, etc)
- 2 tbsp nuts or seeds of choice
- 1/4 cup cooked grains (quinoa, brown rice, millet, etc)
- 1/2-1 tsp grated ginger
- Pepper to taste
- 1-2 fresh basil leaves
- 2-3 tsp balsamic vinegar or glaze
- 1-2 tsp olive oil
