Spicy Mango & Watermelon Summer Salad

Ingredients

2 ripe mangos, cubed

3 cups seedless watermelon, cubed

½ red onion, very thinly sliced

¼ cup fresh mint leaves, roughly chopped

¼ cup cotija cheese or feta cheese (crumbled)

2 tbsp fresh lime juice

2 tbsp fresh lime juice

Instructions

  1. Prep the Onions: Place the thinly sliced red onions in a small bowl of ice water for 5 minutes. This removes the harsh “bite” and keeps them crisp. Drain well. 
  2. Combine Fruit: In a large serving bowl, gently toss together the cubed mango and watermelon. 
  3. Dress the Salad: Drizzle the fresh lime juice over the fruit and sprinkle with Tajín. Toss gently to coat. 
  4. Garnish: Top with the drained red onions, fresh mint, and crumbled cheese. 
  5. Serve: Serve immediately, or chill for 30 minutes to let the flavors meld.
