Spicy Mango Harissa Roasted Carrots with Whipped Feta
Ingredients
- 1 lb carrots, peeled and halved
- 1 cup ripe mango, finely diced
- 2 Tbsp olive oil
- 1 Tbsp harissa paste
- 1 Tbsp honey
- 1 tsp ground cumin
- Salt & black pepper
Whipped Feta
- 4 oz feta cheese
- ¼ cup Greek yogurt
- 1 Tbsp lemon juice
Instructions
- Preheat oven to 425°F.
- Toss carrots with olive oil, cumin, salt, and pepper. Roast 25–30 minutes.
- Mix mango, harissa, and honey.
- Spoon mango mixture over carrots; roast 5 more minutes.
- Blend feta, yogurt, and lemon juice until smooth.
- Spread feta on platter, top with carrots, drizzle pan juices.
