Ingredients

  • 1 lb carrots, peeled and halved
  • 1 cup ripe mango, finely diced
  • 2 Tbsp olive oil
  • 1 Tbsp harissa paste
  • 1 Tbsp honey
  • 1 tsp ground cumin
  • Salt & black pepper

Whipped Feta

  • 4 oz feta cheese
  • ¼ cup Greek yogurt
  • 1 Tbsp lemon juice

Instructions

  1. Preheat oven to 425°F.
  2. Toss carrots with olive oil, cumin, salt, and pepper. Roast 25–30 minutes.
  3. Mix mango, harissa, and honey.
  4. Spoon mango mixture over carrots; roast 5 more minutes.
  5. Blend feta, yogurt, and lemon juice until smooth.
  6. Spread feta on platter, top with carrots, drizzle pan juices.
