Ingredients

Fruit Fillig

  • 2 Tommy Atkins mangos, diced
  • 2 ripe bananas, sliced into thick rounds
  • ½ cup granulated sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • 1 tsp vanilla extract
  • 4 tbsp butter (melted, for baking dish)

Cobbler Batter

  • 1 cup flour
  • ¾ cup sugar
  • 1 cup milk
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract

For Serving

  • Vanilla ice cream

Instructions

  1. Dice mangos and slice bananas into thick rounds. In a bowl, toss with sugar, cinnamon, nutmeg, and vanilla until well coated.
  2. Pour melted butter into a baking dish, then add the mango-banana mixture evenly over the top.
  3. In a separate bowl, whisk together flour, sugar, baking powder, salt, milk, and vanilla until smooth.
  4. Pour the batter evenly over the fruit—do not stir. The batter will rise and form a crust as it bakes.
  5. Bake at 350°F for 35–40 minutes, until the top is golden brown and the edges are bubbling.
  6. Let cool slightly, then scoop into bowls and top with a generous scoop of vanilla ice cream.
