Southern Mango Banana Cobbler
Ingredients
Fruit Fillig
- 2 Tommy Atkins mangos, diced
- 2 ripe bananas, sliced into thick rounds
- ½ cup granulated sugar
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- 1 tsp vanilla extract
- 4 tbsp butter (melted, for baking dish)
Cobbler Batter
- 1 cup flour
- ¾ cup sugar
- 1 cup milk
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
For Serving
- Vanilla ice cream
Instructions
- Dice mangos and slice bananas into thick rounds. In a bowl, toss with sugar, cinnamon, nutmeg, and vanilla until well coated.
- Pour melted butter into a baking dish, then add the mango-banana mixture evenly over the top.
- In a separate bowl, whisk together flour, sugar, baking powder, salt, milk, and vanilla until smooth.
- Pour the batter evenly over the fruit—do not stir. The batter will rise and form a crust as it bakes.
- Bake at 350°F for 35–40 minutes, until the top is golden brown and the edges are bubbling.
- Let cool slightly, then scoop into bowls and top with a generous scoop of vanilla ice cream.
