Ingredients

1 ripe mango, peeled and cut into thick wedges (for charring/smoking)

4 oz straight bourbon whiskey

1 oz fresh lemon juice

1 oz honey syrup (or simple syrup)

6-8 fresh mint leaves

Splash of ginger beer or club soda (optional, for fizz)

Ice (preferably large cubes)

Garnish

  • Smoked sea salt (optional for the rim)
  • Fresh mint sprig
  • A cube of charred mango

Instructions

  1. Char the Mango: Heat a dry cast-iron skillet over high heat or fire up an outdoor grill. Char the mango wedges for 1-2 minutes per side until they develop dark, caramelized grill marks. Let cool, then dice. (This replicates the trending “smoked” flavor without requiring a cocktail smoker). 
  2. Muddle: In a cocktail shaker, combine the diced charred mango, fresh mint leaves, lemon juice, and honey syrup. Muddle firmly to release the mint oils and mash the mango into a thick, pulpy base. 
  3. Shake: Pour in the bourbon and fill the shaker with ice. Shake vigorously for 15 seconds to chill and dilute the spirits. 
  4. Strain and Serve: Double-strain the mixture (using a mesh sieve to catch the fruit pulp and mint bits) over a large ice cube into two rocks glasses. 
  5. Finish: Top with a splash of ginger beer if desired. Garnish with a fresh mint sprig and a reserved cube of the charred mango.
