Mini Tacos De Mango
Ingredients
Mango Salsa
- 1 large ripe mango, peeled and diced
- ¼ cup red onion, finely diced
- 1 jalapeño, finely diced (remove seeds for less heat)
- ¼ cup fresh cilantro, chopped
- 1–2 tbsp fresh lime juice
- Salt, to taste
Steak Tacos
- 1 lb flank steak, skirt steak, or sirloin
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 12–16 mini corn or flour tortillas
- ½ cup cotija cheese, crumbled
- Fresh lime wedges, for serving
Instructions
- Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Gently mix and set aside.
- Season the steak with olive oil, chili powder, cumin, garlic powder, salt, and pepper, coating evenly.
- Heat a grill or skillet over medium-high heat. Sear the steak for 4–6 minutes per side, or until caramelized on the outside and cooked to your preferred doneness.
- Let the steak rest for a few minutes, then slice into small bite-sized pieces.
- Warm the mini tortillas on a skillet or grill until soft and lightly charred.
- Build the mini tacos by layering each tortilla with sliced steak and topping generously with fresh mango salsa.
- Finish with crumbled cotija cheese and a squeeze of fresh lime juice.
- Serve immediately with extra mango salsa and lime wedges for a fresh, sweet-and-savory taco bite.
