Ingredients

Mango Salsa

  • 1 large ripe mango, peeled and diced
  • ¼ cup red onion, finely diced
  • 1 jalapeño, finely diced (remove seeds for less heat)
  • ¼ cup fresh cilantro, chopped
  • 1–2 tbsp fresh lime juice
  • Salt, to taste

Steak Tacos

  • 1 lb flank steak, skirt steak, or sirloin
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 12–16 mini corn or flour tortillas
  • ½ cup cotija cheese, crumbled
  • Fresh lime wedges, for serving

Instructions

  1. Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Gently mix and set aside.
  2. Season the steak with olive oil, chili powder, cumin, garlic powder, salt, and pepper, coating evenly.
  3. Heat a grill or skillet over medium-high heat. Sear the steak for 4–6 minutes per side, or until caramelized on the outside and cooked to your preferred doneness.
  4. Let the steak rest for a few minutes, then slice into small bite-sized pieces.
  5. Warm the mini tortillas on a skillet or grill until soft and lightly charred.
  6. Build the mini tacos by layering each tortilla with sliced steak and topping generously with fresh mango salsa.
  7. Finish with crumbled cotija cheese and a squeeze of fresh lime juice.
  8. Serve immediately with extra mango salsa and lime wedges for a fresh, sweet-and-savory taco bite.
