Ingredients

Mango Tiki Pork Belly

  • 2 lbs pork belly, 1” pieces
  • 3 tbsp oil
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 cups diced fresh mango, ½” pieces
  • 2 tbsp green onions, cut on bias
  • 1 tbsp black and white sesame seeds

Mango Maple Mustard Sauce

  • 2 fl oz maple syrup
  • 1 oz Dijon mustard
  • 2 oz yellow mustard
  • 2 fl oz fresh mango, blended
  • 1/2 cup diced fresh mango, ¼” pieces
  • 1 tbsp salt, pepper, garlic seasoning
  • 4 fl oz pork belly renderings

Instructions

Mango Tiki Pork Belly

  1. In a large bowl, combine the oil, salt, and pepper.
  2. Add the pork belly pieces to the oil mixture, covering each piece.
  3. Lay the pork belly pieces in a single layer on a greased cookie sheet.
  4. Bake the pork belly cubes for 20-25 minutes, flipping them a couple of times throughout the cooking process. Please note: Reserve the drippings for the sauce.
  5. When done cooking, place the pork belly bites into a large bowl. Set aside.

 

Mango Maple Mustard Sauce

  1. In a small bowl, mix the maple syrup, mustards, mango, seasoning, and renderings. Whisk to incorporate.
  2. Pour ¼ the maple mustard sauce over the cooked pork belly bites, tossing to coat. Place back onto the cooking sheet and bake for an additional 5 minutes until the sauce has caramelized.
  3. Place onto serving platter, place dipping sauce on the side and serve.
