Mango Oatmeal Crumble Bars
Ingredients
3 Ataulfo (Honey) mangos, diced into small chunks
2–3 tbsp maple syrup
1 tsp vanilla extract
½ tsp cinnamon
Oat Crumble
- 1 cup rolled oats
- ¾ cup flour
- ½ cup brown sugar
- ½ cup butter (melted) or coconut oil
- ½ tsp cinnamon
- Pinch of salt
Instructions
- Peel and dice mangos into small, even chunks. Add to a bowl with maple syrup, vanilla and cinnamon. Mix until coated and set aside.
- In a separate bowl, combine oats, flour, brown sugar, cinnamon and salt. Pour in melted butter and mix until a crumbly texture forms.
- Line a baking dish with parchment paper. Press half of the crumble mixture firmly into the base to create an even layer.
- Spread mango filling evenly over the base, then top with remaining crumble.
- Bake at 350°F for 30–35 minutes, or until the top is golden brown and the edges are set.
- Let cool completely in the pan before lifting out with parchment paper. Slice into bars and serve.
