Mango Oatmeal Crumble Bars

Ingredients

3 Ataulfo (Honey) mangos, diced into small chunks

2–3 tbsp maple syrup

1 tsp vanilla extract

½ tsp cinnamon

Oat Crumble

  • 1 cup rolled oats
  • ¾ cup flour
  • ½ cup brown sugar
  • ½ cup butter (melted) or coconut oil
  • ½ tsp cinnamon
  • Pinch of salt

Instructions

  1. Peel and dice mangos into small, even chunks. Add to a bowl with maple syrup, vanilla and cinnamon. Mix until coated and set aside.
  2. In a separate bowl, combine oats, flour, brown sugar, cinnamon and salt. Pour in melted butter and mix until a crumbly texture forms.
  3. Line a baking dish with parchment paper. Press half of the crumble mixture firmly into the base to create an even layer.
  4. Spread mango filling evenly over the base, then top with remaining crumble.
  5. Bake at 350°F for 30–35 minutes, or until the top is golden brown and the edges are set.
  6. Let cool completely in the pan before lifting out with parchment paper. Slice into bars and serve.
