Mango Chicken Potsticker with Mango Chili Dipping Sauce
Ingredients
Mango Chicken Potstickers
- 2 lbs ground chicken
- 2 cups cabbage, finely chopped
- 1 cup green onion, minced
- 2 tbsp garlic, minced
- 1 tbsp ginger, minced
- 1/2 cup fresh mango, diced ¼”
- 1/2 tsp black pepper
- 2 tbsp sesame oil
- 2 tbsp soy sauce (or Tamari)
- 1/2 tsp salt
- 24 potsticker wrappers
- 8 fl oz oil
Mango Chili Sauce
- 1/2 cup dark soy sauce
- 2 tbsp rice vinegar
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1 tbsp green onion, minced
- 1 tbsp sesame oil
- 2 fl oz fresh mango, blended
- 2 tbsp fresh diced mango, minced

Instructions
Mango Chicken Potstickers
- In a large bowl, mix together all the ingredients for the filling (ground chicken, cabbage, scallions, garlic, ginger, mango, black pepper, sesame oil, soy sauce and salt). Mix until well combined.
- To assemble the chicken potstickers, take a potsticker wrapper and place on a work surface. Spoon 2 tsp. of the chicken mixture into the center of the wrapper.
- Dip your finger in the water and rub the edges of the wrapper with water as the glue.
- Fold the wrapper in half (it should look like a half-moon) and pinch the middle together. Pleat the side facing you (work with one side at a time), then pinch the pleat to seal. Repeat until you get to the end of the dumpling (around 2-3 pleats per side).
- Repeat the same with the other side, starting at the center again.
- Continue wrapping potstickers until you are out of the filling. Cover the potstickers with plastic or dry towel to prevent from drying. Set aside.
- Heat oil in a large non-stick pan, then put the potsticker flat side down. Cook the potsticker in small batches. Fry them for 3 minutes or until the bottom is golden brown.
- Add ¼ cup of water to the pan, cover with the lid and cook about 4 minutes or until water is evaporated and the potstickers are steamed and seared.
- Serve with the Mango Chili dipping sauce.
Mango Chili Sauce
- Combine all the sauce ingredients (dark soy sauce, garlic, ginger, scallions, mango, rice vinegar, sesame oil and water) in a medium bowl and whisk together.
