Ingredients

  • 1/2 cup nonfat plain or vanilla Greek yogurt
  • 1 tbsp honey
  • 1 small waffle cone
  • 1/2 cup small dice ripe mango
  • 1 tbsp salted roasted peanuts
  • 1 tbsp granola
  • 1 tbsp sweetened toasted coconut chips
  • *Note: Shredded coconut can be substituted if toasted coconut chips are not available.

Instructions

  1. In a bowl, combine the yogurt and honey.
  2. Place a spoonful of mango into the base of the waffle cone then top it with 1/4 cup of the yogurt mixture. Top the yogurt with half of the remaining mango, half of the peanuts, half of the granola, and half of the coconut chips. Repeat the layers with the remaining ingredients and serve.
  3. For young children you can alternatively, make small parfait cones by using sugar cones, reducing the amount of yogurt to 1/3 cup and 1 teaspoon of honey and use ¼ cup of diced mango.
  4. Another option is to create parfait bowls using all of the ingredients for the cones and breaking the waffle cone into pieces to sprinkle on top.
