Mango and Yogurt Waffle Cone Parfaits
- 1/2 cup nonfat plain or vanilla Greek yogurt
- 1 tablespoon honey
- 1 small waffle cone
- 1/2 cup small dice ripe mango
- 1 tablespoon salted roasted peanuts
- 1 tablespoon granola
- 1 tablespoon sweetened toasted coconut chips*
Instantly transform the traditional parfait into a hand held snack by layering sweet mango, honey-kissed yogurt, granola, salty roasted peanuts, and toasted coconut chips in a small waffle cone for a fun treat.
In a bowl, combine the yogurt and honey.
Place a spoonful of mango into the base of the waffle cone then top it with 1/4 cup of the yogurt mixture. Top the yogurt with half of the remaining mango, half of the peanuts, half of the granola, and half of the coconut chips. Repeat the layers with the remaining ingredients and serve.
For young children you can alternatively, make small parfait cones by using sugar cones, reducing the amount of yogurt to 1/3 cup and 1 teaspoon of honey and use ¼ cup of diced mango.
Another option is to create parfait bowls using all of the ingredients for the cones and breaking the waffle cone into pieces to sprinkle on top.
