Green Mango Layer Cake

I wanted to create a cake that utilizes green mango to capitalize on the tartness of the fruit. It has a beautiful boldness that works well in a baked cake such as this. I finish it with a simple cream cheese frosting and fresh ripe mango for the contrast. This has won over many guests at dinner parties.

Ingredients

  • 1 1/4 cup Granulated Sugar
  • 3/4 tsp Baking Soda
  • 1 tsp Cinnamon, ground
  • 3/4 cup Vegetable or Grapeseed Oil
  • 2 cup Grated Green Mango, about 3 medium mangos.
  • 1 1/4 cup All-purpose Flour
  • 1/2 tsp Sea Salt
  • 1 tsp Chinese 5 Spice Powder
  • 3 each Whole Eggs

FROSTING

  • 1 each 8 oz. Package Cream Cheese
  • 1 Vanilla Extract
  • 1/2 cup Powdered Sugar
  • 1/4 tsp Sour Cream

GARNISH

  • 3 each Fresh Mangos, cubed, and garnish
  • Edible Flowers (optional)

Instructions

  1. Preheat oven to 335 degrees Fahrenheit. Prepare two 8-inch diameter cake pans, by lining them with parchment paper rounds on the bottom
  2. In a medium bowl, combine sugar, flour, baking soda, sea salt, cinnamon, and 5-spice. Whisk to combine.
  3. In another bowl, combine oil and eggs. Whisk to combine.
  4. Add all the wet ingredients into the dry. Whisk until combined and no visible lumps. Last, add in grated green mango. Whisk to combine well. Distribute cake batter evenly into the 8-inch cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cakes to cool to room temperature.
  6. For the frosting, in an electric mixer with the paddle attachment, add the cream cheese. Paddle on speed one until smooth. Add powdered sugar and vanilla extract. Paddle till smooth on speed one, scrape down the sides of the bowl and paddle to ensure homogenous mixing. Mix on medium speed until no visible lumps.Add sour cream last. Mix to combine.
  7. To arrange cake, unmold one cake onto a cake board. Place about half of the frosting onto the cake. Spread the frosting to cover the top of the cake.Next,top the frosting with cubed fresh mango all over. Repeat with second layer of cake. Finish with decorating the top with more fresh mango and edible flowers(optional). Decorate bottom of cake with mango hedgehogs and slices.
