Dark Chocolate Pistachio Mango Pops
Ingredients
- 2 large firm mangos
- 6 oz dark chocolate
- 1 tbsp coconut oil
- 2 tbsp crushed pistachio

Instructions
- Wash and peel the mangos with a sharp knife.
- Cut mango cheeks into thick long wedges, approximately ½ inch thick slices.
- Stick a skewer into each wedge.
- Place mango slices on a parchment paper lined tray.
- Put mango lined tray into the freezer to harden.
- Break the chocolate into small pieces and place them and coconut oil into a heatproof bowl.
- Use double boiler to melt chocolate, stirring until fully melted.
- Partially dip each mango into the melted chocolate (the longer the mango stays in chocolate sauce, the thicker the coating).
- Drip off additional excess chocolate before placing on parchment paper.
- Immediately sprinkle with chopped pistachios.
- Repeat process for all mango wedges.
