Dark Chocolate Pistachio Mango Pops

Ingredients

  • 2 large firm mangos
  • 6 oz dark chocolate
  • 1 tbsp coconut oil
  • 2 tbsp crushed pistachio

Instructions

  1. Wash and peel the mangos with a sharp knife.
  2. Cut mango cheeks into thick long wedges, approximately ½ inch thick slices.
  3. Stick a skewer into each wedge.
  4. Place mango slices on a parchment paper lined tray.  
  5. Put mango lined tray into the freezer to harden.
  6. Break the chocolate into small pieces and place them and coconut oil into a heatproof bowl.
  7. Use double boiler to melt chocolate, stirring until fully melted.
  8. Partially dip each mango into the melted chocolate (the longer the mango stays in chocolate sauce, the thicker the coating).
  9. Drip off additional excess chocolate before placing on parchment paper.
  10. Immediately sprinkle with chopped pistachios.
  11. Repeat process for all mango wedges.
