Ingredients

  • 1½ lbs boneless chicken thighs
  • 1 cup mango purée (1 whole, large mango)
  • 2 Tbsp gochujang
  • 1 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • ½ cup coconut milk
  • Neutral oil

Instructions

  1. Sear chicken in oil until browned; remove.
  2. Sauté garlic and ginger 30 seconds.
  3. Stir in mango purée, gochujang, soy sauce, vinegar, coconut milk.
  4. Return chicken; simmer 15–20 minutes.
  5. Serve over rice or noodles.
