Creamy Mango Gochujang Chicken
Ingredients
- 1½ lbs boneless chicken thighs
- 1 cup mango purée (1 whole, large mango)
- 2 Tbsp gochujang
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- ½ cup coconut milk
- Neutral oil
Instructions
- Sear chicken in oil until browned; remove.
- Sauté garlic and ginger 30 seconds.
- Stir in mango purée, gochujang, soy sauce, vinegar, coconut milk.
- Return chicken; simmer 15–20 minutes.
- Serve over rice or noodles.
