Ingredients

Mango Glaze

  • 1 cup finely blended ripe mango
  • ¼ cup bourbon
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons brown sugar
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoon Dijon mustard
  • 2 cloves minced garlic
  • Pinch of red pepper flakes
  • Salt and pepper to taste

Salmon & Mango

  • 4 salmon fillets – skin on
  • 1 tablespoon extra-virgin olive oil
  • 2 ripe mangos, thinly sliced
  • Fresh parsley

Instructions

In a medium bowl, combine ingredients for mango glaze together. Set ¾ cups of the mixture aside and refrigerate the rest for later.

Place salmon fillets in a resealable bag and pour in the remaining half of the marinade. Seal the bag and mix well to coat salmon.

Place the bag in the refrigerator to let salmon marinate for 30 minutes to an hour.

Preheat oven to 375 degrees.

Add oil to a medium-high skillet and carefully place the marinated salmon fillets, skin side up.

Cook for 2-3 minutes or until golden brown.

Flip over the salmon fillets so that skin side is down and add the sliced mangos to the skillet. Cook 2-3 minutes.

Remove skillet from heat. Pour the reserved mango glaze into the skillet and evenly distribute over salmon and mangos.

Transfer the oven safe skillet to the preheated oven and bake for 12-15 more minutes.

Once cooked, remove the skillet from the oven and serve roasted mango and salmon immediately.
