Ingredients

The Wings

  • 2 lbs chicken wings (flats and drumettes), patted very dry
  • 1 tbsp baking powder (the "secret" for air-fryer crispiness)
  • 1 tsp salt & ½ tsp black pepper
  • 1 tsp Tajín seasoning

Mango Habanero Glaze

  • 1 cup fresh mango puree (approx. 2 ripe mangos)
  • 1–2 habanero peppers, seeded and minced (adjust for heat)
  • 2 tbsp honey or agave
  • 1 tbsp lime juice & 1 tsp lime zest
  • 1 tbsp apple cider vinegar

Instructions

  1. Prep the Crunch: In a large bowl, toss the dry wings with baking powder, salt, pepper, and Tajín until evenly coated. The baking powder is critical for achieving crispiness in the air fryer.
  2. Air Fry: Arrange wings in a single layer in the air fryer basket. Cook at 360°F for 12 minutes, flip, and cook for another 12 minutes. Increase heat to 400°F for a final 5 minutes to get them “extra crispy.”
  3. Simmer the Glaze: While wings cook, combine mango puree, habanero, honey, lime juice, and vinegar in a small saucepan. Simmer over medium-low heat for 8–10 minutes until thickened into a sticky glaze.
  4. The Toss: Place the crispy wings in a clean bowl, pour the warm mango habanero glaze over them, and toss until every wing is glowing.
  5. Final Garnish: Finish with a sprinkle of extra Tajín and fresh lime zest.
