Air-Fried Crispy Mango Habanero Wings
Ingredients
The Wings
- 2 lbs chicken wings (flats and drumettes), patted very dry
- 1 tbsp baking powder (the "secret" for air-fryer crispiness)
- 1 tsp salt & ½ tsp black pepper
- 1 tsp Tajín seasoning
Mango Habanero Glaze
- 1 cup fresh mango puree (approx. 2 ripe mangos)
- 1–2 habanero peppers, seeded and minced (adjust for heat)
- 2 tbsp honey or agave
- 1 tbsp lime juice & 1 tsp lime zest
- 1 tbsp apple cider vinegar
Instructions
- Prep the Crunch: In a large bowl, toss the dry wings with baking powder, salt, pepper, and Tajín until evenly coated. The baking powder is critical for achieving crispiness in the air fryer.
- Air Fry: Arrange wings in a single layer in the air fryer basket. Cook at 360°F for 12 minutes, flip, and cook for another 12 minutes. Increase heat to 400°F for a final 5 minutes to get them “extra crispy.”
- Simmer the Glaze: While wings cook, combine mango puree, habanero, honey, lime juice, and vinegar in a small saucepan. Simmer over medium-low heat for 8–10 minutes until thickened into a sticky glaze.
- The Toss: Place the crispy wings in a clean bowl, pour the warm mango habanero glaze over them, and toss until every wing is glowing.
- Final Garnish: Finish with a sprinkle of extra Tajín and fresh lime zest.
