According to Jason Hernandez, chef for the NMB, “The versatility of mango makes it a go-to ingredient for toppings, condiments and sauces.” For his Roasted Mango Salsa, Chef Jason roasts fresh mango pieces along with peppers and chilis to deepen the salsa flavors on his favorite, fish tacos. At Sun Surf Sand, in Fort Lauderdale, the kitchen uses mango to brighten the flavors and colors of its Bavette Steak with Yucca and Mango Chimichurri. The Culinary Institute of America’s Chef Sarah Linkenheil‘s easy-to-make Pickled Green Mango Relish adds a zesty kick to charcuterie plates and sandwich fillings.
