Mango Shrimp Ceviche – Mango Meal Planning
Happy Monday, Mango Meal Planners! We’re starting the week off easy for you with a fresh and simple mango shrimp ceviche! The best part of this recipe is if you don’t want to cook anything – you don’t have to. All you really need to do is chop everything up and combine.
Mondays can be rough on everyone, so keeping it simple is key. Buy pre-cooked shrimp and slice and dice your fresh ingredients the night before. The only tricky part is finding hearts of palm. Hearts of palm are exactly what they sound like – they’re a vegetable that’s harvested from the inside of palm trees. They come in jars or cans, and you’ll likely be able to find them in the canned vegetables or international foods aisles.
From this recipe, you’ll be using mangos (of course!), cilantro, lime and kosher salt again in other dishes throughout the week. This is especially helpful with that cilantro – it seems like you always have to buy a whole bunch of it! This time, you’ll definitely be using all of it.
