Ingredients

Rich Ginger Syrup:

  • 500 Grams Fresh Ginger Juice
  • 1 Kilogram Sugar

Mango Syrup:

  • Mango Concentrate, thawed
  • Sugar

To Assemble and Serve

  • 2 ounces Resposado Tequila
  • 1 ounce Lime Juice
  • 1/2 ounce Mango Syrup
  • 1/2 ounce Rich Ginger Syrup
  • 4 Drop Salt Solution
  • Mango Brandy
  • Tajin
  • 1 Cucumber, slice (Garnish)

Instructions

For the Rich Ginger Syrup:

  1. In a saucepan over low heat, add ginger juice and sugar. Heat until sugar has dissolved without boiling. Remove from heat, place over an ice bath, and stir until cool. Take syrup and place directly into an ice bath and stir until cool. Refrigerate until needed.

For the Mango Syrup:

  1. Weigh out equal portions of mango concentrate and sugar then weigh water so it is half the weight of mango concentrate. In a blender, add the mango concentrate and sugar and blend until smooth. Add water and blend again. Set aside.

To Assemble and Serve:

  1. In a cocktail shaker, add tequila, lime juice, salt solution, ¼ ounce Rich Ginger Syrup, and ½ ounce Mango Syrup then fill with ice. Shake and strain over a rocks glass with ice. Top with 3 pumps mango brandy and garnish with a Tajín-dusted cucumber slice.
