Mango Glazed Ham with Roasted Veggies
Ingredients
Mango Glazed Ham
- Fully Cooked Bone in Ham, 1 Each
- Butter, ½ Cup 1 Stick
- Lite brown sugar, 1 Cup
- Blended Mango, 1 Cup
- Honey, 2 Fl oz.
- Apple Cider Vinegar, 2 Fl oz.
- Cinnamon, 1 Tsp.
Roasted Mango & Vegetables
- Mango Pieces 1” strips, 2 Each mango
- Baby potatoes, 2 Lbs.
- Carrots whole, 1 Lb.
- Olive oil, 2 Fl oz.
- Italian seasoning, 2 Tb sp.
- Mango Blended, 3 Fl oz.
Instructions
Mango Glazed Ham
- Preheat oven to 325°F
- Score the ham surface: Using a sharp knife, cut diagonal lines about ⅛–¼″ deep in a diamond pattern.
- Place the mango pieces, potatoes, carrots oil, seasoning, and blended mango in bowl and toss to coat. Place the fruit and vegetables then ham on a rack in a roasting pan.
- Prepare glaze: In a small saucepan over medium heat melt butter, then add brown sugar, mango, honey, apple cider, cinnamon,
- Brush half of the glaze over the ham. Cover with foil and bake ~20 minutes per lb (approximation: ~2.5–3 hours for 8–10 lb)
- About 15-20 minutes before end, remove foil, brush remaining glaze over ham, increase oven temperature to ~400°F (≈ 204°C) for the last glaze caramelization stage. Bake uncovered until glaze is deeply caramelized and glossy.
- Remove from oven and let rest ~10 minutes before carving.
