Ingredients

Mango Glazed Ham

  • Fully Cooked Bone in Ham, 1 Each
  • Butter, ½ Cup 1 Stick
  • Lite brown sugar, 1 Cup
  • Blended Mango, 1 Cup
  • Honey, 2 Fl oz.
  • Apple Cider Vinegar, 2 Fl oz.
  • Cinnamon, 1 Tsp.

Roasted Mango & Vegetables

  • Mango Pieces 1” strips, 2 Each mango
  • Baby potatoes, 2 Lbs.
  • Carrots whole, 1 Lb.
  • Olive oil, 2 Fl oz.
  • Italian seasoning, 2 Tb sp.
  • Mango Blended, 3 Fl oz.

Instructions

Mango Glazed Ham

  1. Preheat oven to 325°F
  2. Score the ham surface: Using a sharp knife, cut diagonal lines about ⅛–¼″ deep in a diamond pattern.
  3. Place the mango pieces, potatoes, carrots oil, seasoning, and blended mango in bowl and toss to coat. Place the fruit and vegetables then ham on a rack in a roasting pan.
  4. Prepare glaze: In a small saucepan over medium heat melt butter, then add brown sugar, mango, honey, apple cider, cinnamon,
  5. Brush half of the glaze over the ham. Cover with foil and bake ~20 minutes per lb (approximation: ~2.5–3 hours for 8–10 lb)
  6. About 15-20 minutes before end, remove foil, brush remaining glaze over ham, increase oven temperature to ~400°F (≈ 204°C) for the last glaze caramelization stage. Bake uncovered until glaze is deeply caramelized and glossy.
  7. Remove from oven and let rest ~10 minutes before carving.
