Mango Cinnamon Eggnog
Ingredients
- 1 mango
- ¼ cup spiced rum
- 5 cups of milk
- 1 tsp vanilla extract
- 6 eggs
- ½ cup sugar
- 1 tsp cinnamon
Instructions
- Add mango and rum to a blender to make a mango purée.Â
- Separate eggs and store egg whites in the refrigerator. Â
- Add yolks to a bowl and whisk until creamy. Â
- Gradually add 2 tbsp of sugar, whisking at a high speed until thick. Â
- Stir in milk, rum and mango puree, vanilla and cinnamon.Â
- Place in the refrigerator to chill for at least two hours. Â
- Remove egg whites from refrigerator and whisk until soft peaks form. Â
- Add remaining ¼ cup of sugar and whisk into stiff peaks. Â
- Fold in chilled spiced rum and mango puree mixture into egg whites. Â
- Serve in glasses or a glass jar to gift during the holiday season!
