Mango Cinnamon Eggnog

Ingredients

  • 1 mango
  • ¼ cup spiced rum
  • 5 cups of milk
  • 1 tsp vanilla extract
  • 6 eggs
  • ½ cup sugar
  • 1 tsp cinnamon

Instructions

  1. Add mango and rum to a blender to make a mango purée. 
  2. Separate eggs and store egg whites in the refrigerator.  
  3. Add yolks to a bowl and whisk until creamy.  
  4. Gradually add 2 tbsp of sugar, whisking at a high speed until thick.  
  5. Stir in milk, rum and mango puree, vanilla and cinnamon. 
  6. Place in the refrigerator to chill for at least two hours.  
  7. Remove egg whites from refrigerator and whisk until soft peaks form.  
  8. Add remaining ¼ cup of sugar and whisk into stiff peaks.  
  9. Fold in chilled spiced rum and mango puree mixture into egg whites.  
  10. Serve in glasses or a glass jar to gift during the holiday season!
