French Toast Bites with Mango Dipper
Ingredients
For the French toast bites:
- 1 package King’s Hawaiian sweet rolls (12 rolls)
- 3 large eggs
- ¾ cup whole milk or half-and-half
- ¼ coconut milk
- ½ tsp almond extract
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground cardamom
- Pinch of salt
For the crust & dusting:
- 1½ cups plain kettle-cooked potato chips, crushed into coarse crumbs
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
- ½ tsp ground cardamom
- Butter or oil for frying
For the mango miso maple dipper:
- ¼ cup mango purée (fresh or thawed frozen)
- ¼ cup mango diced (fresh)
- 3 tbsp pure maple syrup
- 1 tsp white or yellow miso paste
- 1 tsp rice vinegar or lemon juice
- Pinch of salt
Instructions
- Make the custard:
Whisk together eggs, milk, vanilla, cinnamon, cardamom, and salt in a shallow bowl until smooth. - Prep the rolls:
Tear or cut the King’s Hawaiian rolls into quarters. You want two-bite pieces – soft but sturdy enough to hold the custard. - Coat with chips:
Dip each roll piece in the custard quickly (don’t soak too long or they’ll fall apart), then press into crushed potato chips to coat all sides. - Cook the bites:
Heat a large nonstick skillet or griddle over medium heat and add a little butter or oil. Fry the coated French toast bites until golden and crispy on all sides, about 2–3 minutes per side. - Toss in spiced sugar:
While still warm, toss each bite in a bowl with cinnamon, cardamom, and sugar for that warm, spiced sparkle. - Make the dipper sauce:
In a small saucepan or microwave-safe bowl, warm the mango purée, maple syrup, miso, and vinegar together. Whisk until smooth and glossy. Taste and adjust with a touch more maple or acid if needed.
To Serve
Pile the warm French toast bites high, drizzle with a little extra dipper if you like, and serve the rest on the side for dunking. Optional garnish: flaky salt or a dusting of powdered sugar.
