Happy Chinese New Year!

Today’s new moon sparks the start of Chinese New Year, and we’re celebrating the best way we know how – eating mango!

Interestingly, prior to the 1960s, there were no mangos in China. In 1968, the Pakistani foreign minister presented Chinese Chairman Mao Zedong with mangos as a diplomatic gesture, and sparked a “mango fever” amongst its people. Today, mangos are still grown in China from this initial political gift.

Mango and Shrimp Stir Fry

Now that mangos have embedded themselves in Chinese culture, it seems fitting to eat a honey shrimp and mango stir fry for Chinese New Year.  You can’t go wrong with shrimp, veggies, and mango!
